The finicky frosting is expensive to make, harder to spread and less durable than fondant, but oh, the payoff on the palate. “I grew up baking in 4-H,” Marshall says. “Real butter, real vanilla, the best sugar.” Buttercream has its limitations, especially in hot weather, but Marshall can make it perform.
